What is Wagyu?

The word “Wagyu” is actually made up of two words in Japanese. “Wa” means “Japanese”. “Gyu” means “Cow”.

But that doesn’t mean all Wagyu has to come from Japan. Nowadays, when we talk about Wagyu, we normally refer to any cow that has genetics originating from the famous Japanese Black breed of cow.

They can be raised anywhere in the world, and that’s why you see British Wagyu on supermarket shelves.

In Japan, each city and each farm has different techniques, and there are even nuances in taste, texture, and appearance. You may have heard of some famous types of Japanese Wagyu like “Kobe” or “Kagoshima”. Things like how the cows are treated, farm location (is it by the sea, or up in the mountains?), and what kind of food the cows eat all contribute to the final steak experience.

Just like there are subtle differences between Japanese farms, there are even greater differences between each country, as the climate, diet, and welfare vary from country to country.
